In the Ella Valley, where the hills are lined with vineyards and olive trees, a group of Golani Brigade veterans created a coffee that carries the name of their fallen friend, Omer Gaeldor z”l. Omer was an architect, a father, and a soldier who found peace in small moments – a view across the valley, the ripening of dawn, a cup of coffee brewed over an open flame before a long day. When he fell in service to Israel, his friends chose to honor his memory through the same comforting ritual, which carries a sense of familiarity in life’s most gentle moments.
Among those leading the effort is Yosef Sioux, the Shop Manager and a veteran of the Golani Brigade who has served many rounds as a reservist. Yosef and his company organized this special project to commemorate Omer’s life and legacy, ensuring that his story continues through something that united them all – a simple, shared love of coffee and the camaraderie it represented.
The blend begins with Arabica Caturra beans roasted to a deep, balanced color. A touch of turmeric is added, lending the coffee a gentle spice and a clean, earthy finish. The recipe comes from the field, inspired by the brews shared in tin cups during long watches at night. What began as a ritual among brothers in arms has become a lasting tribute, made with precision, care, and respect.
Roasted in the same region where Omer once served, Golani Coffee stands as a living connection between memory and the land. Each bag represents work done by those who continue to protect and cultivate Israel’s soil – a blend of courage, loyalty, and love for the Holy Land.
