In 2007, in the Gush Etzion community of Mount Gilo, Racheli turned a deeply personal challenge into the beginning of a family business. When her husband was diagnosed with Crohn’s disease, she returned to the kitchen and began experimenting with foods he could enjoy, recalling the culinary training she had completed at Hadassah College. Her creations soon won enthusiastic approval from family and friends, and Racheli’s Cookie Box was born.
Her Pecan Crunch grew from those early experiments. Handmade in small batches without preservatives or food coloring, these craggy clusters are packed with nuts and baked until deeply golden, with pecans, almonds, and cashews giving each bite a generous crunch and rich, roasted flavor.
Racheli built her bakery in the hills just south of Jerusalem, close to Bethlehem and Rachel’s Tomb—a fitting home for a producer whose own name is an expression of our Matriarch Rachel. Over the years, her business has faced boycotts that closed doors to Israeli products from Judea, yet Racheli and her family have continued baking where they planted their roots.

Racheli’s Pecan Crunch
Racheli and her husband Uriel Mekhaber established their business in 2007 and have been making the most divine healthy cookies since then.
Their business evolved out of need. Uriel was diagnosed with Crohn’s Disease in 1998 and Racheli began experimenting with ways to cook him delicious food and treats that met the strict guidelines necessary to maintain his health; no sugar, no gluten, no starch.
Over time Racheli created recipes that are at the heart of Racheli’s Cookies. From their humble beginnings, when they used to bake their sweet treats in the kitchen of Uri’s mother in Jerusalem, to their new factory in Efrat, a Jewish settlement in Judea, Racheli’s Cookies have developed a fierce and loyal band of fans.
Racheli firmly believes that the cookies taste better when they are made by hand, as they still are. The ingredients are hand-measured, blended, mixed, and rolled which means that when you enjoy her treats, you feel the extra care and love that goes into each one.
