Assi Olive Mill stands in the fertile plains near Beit She’an, where olive cultivation has shaped daily life since biblical times. Their mission: elevate Israeli olive oil while honoring the hardworking families who grow the fruit itself. Assi partners directly with local farmers, walking their fields, tasting alongside them at harvest, and selecting only the olives that best express the valley’s character.
Under the direction of David Noy, Assi became a leader in establishing Israel’s Olive Oil Seal, a national standard created to protect consumers and reward authentic, high quality Israeli production. This work has strengthened trust in local agriculture and opened vital opportunities for smaller growers whose livelihood depends on fair recognition of their craft.
