The Mafe Habait (which means home bakery) pastry chefs make sweets according to family recipes handed down from previous generations. Just as their grandmothers did not use food coloring or preservatives, nor do they! They have, however, adapted their recipes to reduce sugar in keeping with modern sensibilities.
