In Israel, confectionery often leans on contrast—soft and crisp, dense and airy, coated and layered. This nougat follows that approach, combining a firm interior with a textured outer layer that holds its shape and breaks cleanly when bitten.
Each piece is built around a nougat center that sets with structure, giving it a dense, slightly elastic bite. Roasted almonds are worked into the base, adding weight and a subtle crunch throughout. The exterior is coated in chocolate, with a light scattering of crushed nuts across the surface that adds a second layer of texture.
The flavor opens with the chocolate coating, then moves into the nut-filled nougat. The almonds remain present across each bite, grounding the sweetness and giving the piece a more defined finish.
Fenster’s produces this confection in Israel, working within a tradition of small-scale sweets that rely on careful preparation and controlled texture. This bar reflects that approach, with each component set into place rather than blended into a single uniform mass.
Serve it alongside coffee, break it into smaller pieces, or keep it on hand as a finished sweet. It holds its structure and texture from the first piece to the last.
From Israel, where confectionery often centers on texture as much as flavor, this nougat sets that balance into a compact, chocolate-coated form.

Crunchy Nougat – Fenster’s (Israel)
Founded by the Fenster family, Fenster’s Toffee makes old-fashioned sweet treats with a distinctly Israeli character. Before he ever worked with chocolate, Oded had a surprising first career — he was a professional basketball player in Israel, until a serious knee injury cut it short. Changing direction, he traveled to Belgium to learn the art of chocolate making alongside some of Europe’s most respected chocolatiers, then returned home to open his own workshop.
Today Oded and Eyal craft chocolates, toffees, and marzipans entirely by hand, inspired by the authentic flavors of Israel — delicate marzipan, rich pistachios, warm cinnamon, and bright orange. Each piece has a real sense of place, carrying the aromas of ripe fruit, fragrant spices, and the people who lovingly make these sweets by hand.
Their workshop is also a place of purpose. The Fensters employ and train young adults with developmental disabilities, giving them meaningful work, real skills, and a space where they are treated with respect and dignity.
Looking ahead, there’s plenty more on the way: a honey toffee for Rosh Hashanah, sour toffee snacks for kids, a new marzipan bar, chocolate-coated marzipans, unique marmalade flavors, a blondie crunch, and other sweet surprises still to come.
“Our message to you is simple: we hope you feel the true meaning of what we are building together. Your support gives us the strength to grow our business, create jobs, and continue making our handmade sweets during one of the most challenging times Israel has faced. In return, we hope every bite brings you a little moment of happiness and a deeper, heartfelt connection to the beauty, flavors, and spirit of our country. Thank you for everything!”
