Butter, sugar, and cream are slowly cooked until they become toffee. For this Rosh Hashanah edition, Oded Fenster added another ingredient to the recipe: Israeli honey. The honey softens the caramel with a gentle floral note that lingers after each piece is gone. A thin coating with a chocolate flavor adds another layer of sophistication to this specialty toffee.
Individually wrapped, each piece is easy to share around the holiday table or tuck away for later.
The recipe was developed especially for Lev Haolam by Fenster’s Toffee, a family confectionery in Or Akiva.
Before he became a confectioner, Oded Fenster spent years on a basketball court. He played professionally in Israel until a serious knee injury ended his career. Looking for a new direction, he traveled to Europe, where he learned the craft of chocolate making before returning home with the skills to open his own confectionery.
Today, Oded continues to make toffee by hand in Israel, and develops recipes that build on traditional confectionery while incorporating ingredients that belong to the country where he lives. This Honey Toffee was created especially for Rosh Hashanah, and pairs one of the season’s most familiar flavors with a classic caramel confection.

Honey Toffee
Founded by the Fenster family, Fenster’s Toffee makes old-fashioned sweet treats with a distinctly Israeli character. Before he ever worked with chocolate, Oded had a surprising first career — he was a professional basketball player in Israel, until a serious knee injury cut it short. Their workshop is also a place of purpose. The Fensters employ and train young adults with developmental disabilities, giving them meaningful work, real skills, and a space where they are treated with respect and dignity.
