Sweet Potato Quinoa Salad

Ingredients
Quinoa

Cup
Fresh spinach leaves

Pounds
Baby salad leaves

Cup
Boiled sweet potato, cubed

Pcs.
Cranberries
1
Cup
Honey
1
Tbsp
Walnuts, crushed
1/2
Cup
Israeli Olive oil
4
Tbsp
Dead sea Salt
to taste
Lemon juice
1/4
Cup
Instructions
Step 1
In a medium sauce pot, bring 2 cups of water to a boil.
Step 2
Add quinoa to the water. Reduce heat to low. Cook for 15 minutes until all of the water is absorbed and the quinoa is soft.
Step 3
Drain any remaining water from the quinoa. Allow to cool.
Step 4
In a large salad bowl, add all the other ingredients. Add quinoa.
Step 5
Toss to mix thoroughly
