Moufleta

Mimouna is a joyful Moroccan-Jewish celebration that marks the end of Passover, signifying the return to eating chametz (leavened foods). This festive occasion brings families and friends together to enjoy delicious food, music, and dancing. One of the most traditional and beloved dishes enjoyed during Mimouna is Moufleta, a sweet and delectable Moroccan-Jewish pancake. In the spirit of this vibrant celebration, we’re excited to share a simple and authentic Moufleta recipe for you to enjoy with your loved ones. 😊

Difficulty:
6 / 10
cook time:
2 h
Ingredients
All-purpose flour 3 Cup
Kosher salt 1/2 Tsp
Warm water 1 Cup
Vegetable oil, plus extra for frying 1/4 Cup
Unsalted butter, melted 1/2 Cup
Honey, for serving 1 Cup
Instructions
Step 1
In a large bowl, combine the flour and salt. Gradually add the warm water while mixing until a soft, smooth dough forms. If the dough is too sticky, add a little more flour; if it's too dry, add a bit more water.
Step 2
Knead the dough for 5-10 minutes on a floured surface until it becomes elastic and smooth. Divide the dough into 12-14 equal-sized balls.
Step 3
Lightly coat each dough ball with vegetable oil and place them in a bowl. Cover the bowl with a clean cloth or plastic wrap and let the dough balls rest for 30-60 minutes.
Step 4
Heat a non-stick skillet or griddle over medium heat. Lightly oil the pan.
Step 5
On a well-oiled surface, flatten a dough ball with your hands, then gently stretch it out as thin as possible without tearing it. The dough should be almost translucent.
Step 6
Carefully transfer the flattened dough to the hot skillet and cook for 30-45 seconds or until bubbles form and the bottom turns golden brown. Flip the Moufleta and cook for an additional 30-45 seconds on the other side.
Step 7
Remove the cooked Moufleta from the skillet and immediately brush it with melted butter. Stack the cooked Moufletas on a plate, brushing each one with butter as you go.
Step 8
Continue the process with the remaining dough balls, adding more oil to the pan as needed.
Step 9
To serve, spread honey over the warm Moufleta, then fold or roll it up. Enjoy your delicious Moufleta with family and friends as you celebrate Mimouna together.
