Cauliflower Tabbouleh Salad

Tabbouleh is a classic dish from the Middle East, made with bulgur wheat, parsley, mint, tomatoes, onions, and a zesty lemon dressing.
This recipe is a great vegetarian substitution for the classic tabbouleh, with all the same fresh and fragrant herbs, juicy tomatoes, and tangy lemon dressing, but with a base of cauliflower rice instead of bulgur wheat.
So, let’s get cooking and enjoy the delicious flavors of Israel with a healthy and nutritious twist!

cook time:
35 min
Head of cauliflower 1
Fresh parsley, chopped 1/2 Cup
Fresh mint leaves, chopped 1/4 Cup
Fresh cilantro, chopped 1/4 Cup
Red onion, finely chopped 1/4 Cup
Cherry tomatoes, halved 1/2 Cup
Lemon juice 1/4 Cup
Extra virgin olive oil 1/4 Cup
Salt and black pepper to taste
Step 1
Begin by washing and drying your cauliflower head. Remove the stems and leaves, then cut the cauliflower into small florets.
Step 2
Place the cauliflower florets into a food processor and pulse until they reach a rice-like consistency. If you don't have a food processor, you can also use a cheese grater.
Step 3
In a large mixing bowl, combine the cauliflower rice with the chopped parsley, mint, cilantro, red onion, and tomatoes.
Step 4
In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
Step 5
Pour the dressing over the cauliflower rice mixture and stir to coat evenly. Taste and adjust seasonings as necessary, then serve and enjoy!
