Ingredients
Head of cauliflower 1
Fresh parsley, chopped 1/2 Cup
Fresh mint leaves, chopped 1/4 Cup
Fresh cilantro, chopped 1/4 Cup
Red onion, finely chopped 1/4 Cup
Cherry tomatoes, halved 1/2 Cup
Lemon juice 1/4 Cup
Extra virgin olive oil 1/4 Cup
Salt and black pepper to taste

Step 1
Begin by washing and drying your cauliflower head. Remove the stems and leaves, then cut the cauliflower into small florets.

Place the cauliflower florets into a food processor and pulse until they reach a rice-like consistency. If you don't have a food processor, you can also use a cheese grater.

In a large mixing bowl, combine the cauliflower rice with the chopped parsley, mint, cilantro, red onion, and tomatoes.
